This Thursday, Betsy's recipe is a Mediterranean Chickpea Salad! A healthy treat that's good to eat!
This week's recipe is fantastic for getting your daily veggies in! Also, the chickpeas listed for this delicious salad contains nearly 82 grams of protein. Now that will put a skip in your step! If you prefer a dairy free salad, feta cheese can be replaced with your favorite pesto!
Ingredients: 15 oz. chickpeas, drained and rinsed 1 medium cucumber, chopped 1 bell pepper, chopped 1/2 red onion, thinly sliced 1/2 cup Kalamata olives, chopped 1/2 cup crumbled feta cheese 1/2 cup olive oil 1/4 cup white wine vinegar 1 tablespoon lemon juice 1 tablespoon chopped parsley 1/4 teaspoon red pepper flakes salt and pepper to taste
Instructions: In a large bowl, toss together the chickpeas, cucumber, bell pepper, onion, olives, and feta. Season with salt and pepper. In a jar with a lid, mix the olive oil, vinegar, lemon juice, parsley, and red pepper flakes. Close the jar and shake until fully mixed. Season with salt and pepper. Dress the salad with vinaigrette before serving!
